Pulled pork tacos make a super quick dinner...by slow cooking and freezing the pork first, you can have lots of easy meals on hand.
To make the pulled pork, I used this recipe (my favorite at home pulled pork recipe ever). This recipe makes a ton...package in single servings and freeze for lots more meals.
The taco pictured is on a corn tortilla, which I think are perfect with these flavors, but you can use a flour tortilla if you prefer.
To top you tacos, here are some ideas:
- shredded purple cabbage (pictured)
- black beans
- chopped fresh cilantro (pictured)
- salsa (pictured)
- shredded carrot
- pickled red onion
- corn
- pico de gallo
- guacamole
- minced onion (pictured)
- sour cream (or plain Greek yogurt for a healthy substitute)
- pickled jalapeƱos
- sliced avocado
- fresh lime juice
- salsa verde
- shredded Monterrey Jack or cheddar cheese
- chopped tomato
